In the Spring of 2007 we applied 8 yards of Vermont Compost Company’s unscreened compost to a 30′ x 90′ plot of land just 15 feet from the cafeteria door. After we mixed the compost into the nasty, compact fill, we planted potatoes. That fall the Environmental Applications class harvested 800 lbs of potatoes! Last year we grew potatoes, onions and Butternut squash. This year we are adding dry beans and carrots to the list. Next fall we’ll plant garlic.
